Best Pancakes IN THE WORLD

1 1/2 cups all purpose flour
3 1/2 tsp baking powder
1 tsp salt
2 tbsp sugar
3 tbsp butter, then melted
1 egg
1 1/4 milk
cooing spray

Ok....this morning I was craving pancakes like a pregnant woman. I checked the pantry and there was no Aunt Jemima or Bisquick. I freaked out!!! Literally. My kids came in the kitchen to ask me if I was ok. I started to laugh and explained to them what was wrong with mommy when my 3 year old reminded me that "I thought my mommy can do anything?" That woke me up...I hit the internet and found a recipe online. I then called my sis and she told me that she had a similar recipe but hers asked for more sugar and more butter.  I used hers because growing up she was the one that was addicted to pancakes! lol This is her recipe...thank you Jen!

1. She told me to sift the flour, baking powder, salt, and sugar first. I did.
2. Then she told me to mix in the egg, milk and finally the melted butter. I did.
3. She then told me that it was VERY important to let the batter rise for about 3-4 minutes. I did.
4. Then she told me to spray the pan and place it on medium low heat....I put it on 4.
5. Finally I mixed the batter a little then spooned the mixture in the pan.

!!!!!OMG !!!!!!

I am not kidding, they were the best pancakes ever. They turned out tasting like Aunt Jemima but had the fluffiness of Bisquick! EVERYONE LOVED THEM!!! I am NEVER buying boxed pancake mix!
